Bodegas Sendra González operates here under the Príncipe Azahar label, producing a range of extraordinary products: cold-pressed olive oils, single-ingredient infused oils, artisan vinegars, gourmet salts, and fruit wines. How It's Made
Premium Olive Oil Base
Every product begins with high-quality extra virgin olive oil cold-pressed at the facility. Quality olive oil never turns cloudy: it is one of the clearest indicators of purity, and every batch from Príncipe Azahar meets that standard.
Single-Ingredient Maceration
Each flavored oil is macerating in its own dedicated vat: truffle, rosemary, chili pepper, lemon, garlic. There is no cross-contamination, no blending of ingredients in production. Each vat is devoted exclusively to one ingredient.
No Artificial Anything
No drops, no concentrates, no artificial flavorings, no chemicals. What goes into the vat is the real ingredient: whole truffles, fresh rosemary, dried chilis. The oil does the rest.
Artisan Vinegar Production
The same philosophy that guides the oils applies to the vinegars. Natural fermentation, single-ingredient infusions, no shortcuts. The facility is currently developing a mango vinegar, continuing its tradition of pioneering fruit-forward production.
Fruit Wines, A World First
Príncipe Azahar is the only winery in the world producing fruit wines. Their orange wine attracted the attention of Televisión Española, one of Spain's most recognized broadcast networks, which produced a documentary feature on the winery and its owner. The recognition speaks to a level of innovation rarely seen in artisan food production.

Oil Clarity as Quality Standard
High-quality extra virgin olive oil is transparent and clear. Príncipe Azahar uses this as a baseline quality indicator: if it clouds, it doesn't ship. Quality certificate provided by the producer upon request.
Zero Artificial Additives
No artificial drops, flavorings, concentrates, or chemical enhancers of any kind are used in production. Every infusion is achieved through time and the real ingredient: nothing else.
